Is an angel food cake pan necessary?
It is possible to get away with using small pans to bake little angel food cakes (like cupcakes, for example), but if you’re planning on baking one big cake then yes, you will need a large tube pan.
An angel food cake tube pan is designed specifically so that the egg whites in the batter cook evenly and are allowed to rise high as they bake. The hole in the center is necessary, and so are tall, straight, and not non-stick sides.
Why is angel food cake cooled upside-down?
Angel food cake MUST be cooled inverted, or upside down. Otherwise, the cake will collapse on itself. Tube pans can be balanced on bottles or you can rest the edges against something raised (like books or cutting boards of equal heights). The cake must be inverted immediately after removing from the oven and remain inverted until the cake is completely cooled which will take approximately 1 1/2 to 2 hours.
